Oatmeal Eggwhite Pancakes

Even my 3 yr. old daughter likes these!


I am going to discuss how to make Oatmeal Eggwhite Pancakes in this post.  
These are very yummy, if made correctly, and extremely healthy!  Even those of you getting ready for Physique Competitions can eat these!

Ingredients:

1 Cup Oatmeal (Old Fashioned is ideal for lower glycemic index)
5 Egg Whites
1 tsp Cinnamon

 

How to Prepare

Put 1 Cup of Oatmeal into a microwavable bowl with a few ounces of water and put in microwave for 30 seconds.  Why do you do this?  This is to soften the Oats a little. 
You could keep them dry but the Pancakes come out a little too crunchy if the Oats are not softened up a bit.  Now mash the oats with a fork a little.

Next put 5 eggwhites into the bowl along with 1 tsp of Cinnamon.  The Cinnamon is a must for flavor and a great Anti-Oxidant!  Now mix together.  The consistency should be a little thick.  If they are too thick you could add another egg white or a little bit of water.

The next step is to get the mixed indredients onto a Griddle or Pan that is lightly sprayed with some Pam for non-fat cooking.

I recommend a medium heat.  After a few minutes the pancakes will bubble and the edges will dry out a little.  At this point if you can get a spatula under them then give them a flip!

After a few more minutes they will be done and ready to serve.  If you are on a strict diet you can top them off with some Sugar Free Syrup or for those of you not cutting the calories top them off with some fruit and your favorite syrup.  I would recommend a Sugar Free Syrup made with Splenda or if you don’t want any artificial sweetners use a Natural Maple Syrup.
